				<content:encoded><![CDATA[<p>Happy Friday Mint-Maggers! The sun is shining after the last few days of storm so we thought we would share this delicious champagne mojito with you for a touch of Summer &#8211; after all, Spring is in site!</p>
<p><strong>Ingredients</strong></p>
<p>1 ounce freshly squeezed lime juice<br />
1 ounce freshly squeezed pink grapefruit juice<br />
1 tablespoon superfine sugar<br />
6 to 8 fresh mint leaves<br />
2 ounces light rum<br />
3 to 4 ounces chilled champagne<br />
Quartered grapefruit slice for garnish</p>
<p><strong>Method</strong></p>
<p>1. In the bottom of a highball glass (or mason jar!), muddle the mint leaves, sugar, and lime juice until the sugar is dissolved.</p>
<p>2. Add the rum and grapefruit juice.</p>
<p>3. Fill the glass with ice and top with champagne.</p>
<p>4. Garnish with grapefruit slice.</p>

<p><strong>Ingredients </strong></p>
<p>60 grams good quality white chocolate<br />
5-6 tbsp granulated sugar<br />
1/2 cup heavy cream<br />
3/4 cup whole milk<br />
1 1/2 tsp. pure vanilla extract<br />
180ml white rum or vodka</p>
<p><strong>Method</strong></p>
<p>1.   Roughly chop the chocolate and place it in a large heat-proof bowl. Set the bowl over a pot of barely simmering water, making sure the bottom of the bowl does not touch the surface of the water. Heat until the chocolate has melted, stirring frequently.<br />
2.   Add the sugar and cream. Heat, stirring, until the sugar has dissolved. Add the rest of the cream and the milk, and stir until smooth.<br />
3.   Remove from the heat, and stir in the vanilla extract and rum or vodka. Let cool completely at room temperature, then refrigerate overnight.<br />
4.   Skim away any of the fat from the chocolate and cream that has risen to the top, and pour into a (very clean) bottle or jar. Keep refrigerated.</p>

With that in mind, a champagne cocktail is a must for a little get together or a bit of pre-party fizz to start your night off. Give this Blackberry Thyme Sparkler a go, it&#8217;s delicious and so pretty looking!</p>
<p><strong>Ingredients </strong></p>
<p>1 cup. blackberries + 8 more for garnish<br />
1 cup. Water<br />
1 cup. sugar<br />
1 bottle of champagne<br />
90ml gin<br />
4 long sprigs of thyme<br />
1 c. ice<br />
Gold baking sugar for the rim</p>

<p><strong>Method</strong></p>
<p>1. In a small saucepan, bring blackberries, water, and sugar to a boil.  Reduce heat and simmer for 10 minutes, until the blackberries are soft and the simple syrup has turned to a bright pink/redish color. Remove from heat, drain blackberries, and allow to cool.  This step can be done well in advance as the syrup will keep for at least a week in the refrigerator.</p>
<p>2. Prepare your champagne glasses.  Okay, so here is a dirty little secret of getting those beautiful salts and sugars to stay atop the rim: butter.  It adheres perfectly and you honestly never taste it. Place the tiniest amount between your fingers and rub just around the rim of the glass before dipping the glass into the gold baking sugar.</p>
<p>3. Next, begin by adding 1 ounce of gin to each champagne glass.  Next drop two blackberries in each glass, followed by 60ml of homemade blackberry simple syrup. Fill the rest of the glass with champagne and top with a sprig of thyme in each glass. Voila!</p>

<p><strong>Ingredients</strong></p>
<p>300 mls apple cider<br />
120 mls bourbon<br />
1 lady apple, cut in thick slices<br />
2 teaspoon organic, raw honey<br />
¼ teaspoon cinnamon</p>

<p>1. Place cider, apple slices, honey and cinnamon in a sauce pot, bring to boil and let simmer for 5 minutes, just to release the flavours.</p>
<p>2. Strain the mixture (saving the apple slices for garnishing) and add bourbon.</p>
<p>3. Pour into serving glasses and sip warm.</p>

<p><strong><span style="color: #222222;">Ingredients</span></strong><br style="color: #222222;" /><br style="color: #222222;" /><span style="color: #222222;">3 medium ripe yellow or white peaches, pitted and roughly chopped (about 3 cups)</span><br style="color: #222222;" /><span style="color: #222222;">3/4 cup unrefined granulated sugar</span><br style="color: #222222;" /><span style="color: #222222;">3/4 cup red wine vinegar</span><br style="color: #222222;" /><span style="color: #222222;">2 slices cling-free ripe peaches</span><br style="color: #222222;" /><span style="color: #222222;">1/6 medium lime</span><br style="color: #222222;" /><span style="color: #222222;">4 to 6 fresh mint leaves plus more for garnish</span><br style="color: #222222;" /><span style="color: #222222;">1 ounce peach shrub</span><br style="color: #222222;" /><span style="color: #222222;">1 1/2 ounces good-quality bourbon</span><br style="color: #222222;" /><span style="color: #222222;">2 dashes orange bitters</span><br style="color: #222222;" /><span style="color: #222222;">Ice</span><br style="color: #222222;" /><span style="color: #222222;">Splash chilled ginger ale</span></p>
<p><strong><span style="color: #222222;">Method</span></strong><br style="color: #222222;" /><br style="color: #222222;" /><span style="color: #222222;">For the shrub: Combine the peaches and sugar in a nonreactive (stainless steel or glass) bowl then cover and refrigerate at least 6 and up to 48 hours. Once the peaches have let off about 1 cup of liquid, strain the mixture and discard the fruit then stir in the vinegar as well as any accumulated sugar.</span><br style="color: #222222;" /><br style="color: #222222;" /><span style="color: #222222;">For the cocktail: Combine the peach slices, the lime wedge, the mint leaves, and 1 ounce of the shrub in a cocktail shaker and muddle until the peach and mint leaves are broken up.</span><br style="color: #222222;" /><span style="color: #222222;">Add the bourbon, the bitters, and enough ice to fill the shaker halfway. Shake until thoroughly chilled, about 20 seconds then strain into an ice-filled rocks glass. <p><strong>Ingredients</strong></p>
<p>2 bottles blush wine</p>
<p>½ cup Limoncello</p>
<p>2 lemons, sliced</p>
<p>1 pint raspberries</p>
<p>2 cups cold sparkling water</p>
<p><strong>Instructions</strong></p>
<p>Mix the wine, Limoncello, lemons, and raspberry in a large pitcher.</p>
<p>Refrigerate until cold.</p>
<p>When ready to serve, top with sparkling water and give it a gentle stir.</p>
