Recipe Book: Warm Autumn Salad

We’re very excited at the Mint Mag to have  Jette Virdi on board as our new foodie contributor! She will be creating lots of delicious, healthy and wholesome seasonal recipes for us to share with you starting with this wonderful Warm Autumn Salad. Over to Jette!

The change of season is upon us and there is no escaping the wintery winds and leaves falling all around. Even though the sun is still shining and the urge to eat salads is still strong. I’m getting colder by the second and this warm autumn salad is just the job to keep you healthy, refreshed but warm!

Autumn is squash season and there are numerous varieties out there which can be interchanged in this salad or feel free to use several different varieties at once.

Ingredients

½ cup of quinoa (uncooked) per person

2 slices of squash per person

1tbsp chopped parsley per person

½ cup of raisins per person

4 florets of broccoli per person

1 carrot per person, peeled and roughly chopped

Juice of 1 lemon

Method

Preheat oven to 180C. Pop the quinoa into water (ratio 1:2) and cook until water is absorbed. Meanwhile place the squash rings, broccoli and carrots on a baking tray. Drizzle with oil and season, cook for roughly 15 mins or until a knife slides in easily. Meanwhile in a bowl mix the parsley and raisins together and once everything is cooked mix well and drizzle lemon juice over. Serve warm and enjoy.
