Monday Munchies: Shrimp Scampi

Mondays mean you just want to cook something easy for dinner and this shrimp recipe is exactly that. Mix in with your pasta or with a simple veg/salad dish. We’ll be trying it tonight for sure.


2 tablespoons butter
400 grams shrimp, peeled and de-veined
1/2 teaspoon salt
2 garlic coves, crushed
2 tablespoons lemon juice
2 tablespoons diced fresh parsley


1. Heat the butter in a sauté pan over medium heat.

2. Add the shrimp and salt and sauté for 2 minutes. Add the garlic and sauté for 1 more minute, or until the shrimp are cooked through.

3. Sprinkle the shrimp with the lemon juice and parsley, and toss to coat well.

4. Serve alongside vegetables or over pasta.
